Efteråret er kommet listende ind fra højre, det er her, selv om vi måske prøver at holde fast i sommeren.
Temperaturerne ude snyder os nok vores hjerner en smule, vi går omkring i haverne med bare arme og lun vind i håret og smak – så er det mørkt, når kommer er 19.30. Det snyder, for når det er varmt, så er der lyst længe her i vores lille land, sådan er reglen. Det ved vejret bare ikke.
Jeg bliver altid lidt havetræt, når vi når til denne tid på året, jeg har ikke mere ork til lugning, vanding, omrokering af potter, opbinding i drivhuset. Der er ikke mere hopla til at flytte stauder, købe nyt og klippe ned. Jeg gider ikke mere. Heller ikke selv om vejret er skønt til den slags.
Bevares – jeg kan da godt slænge mig i en rar stol på plænen eller sidde på den overdækkede terrasse med en kop te, men sådan at mosle i haven? Nej tak ellers tak.
Lige så ivrig jeg er i foråret, lige så mættet er jeg i efteråret. Slut med have, klar parat start på indesysler og stearinlyshygge. Jeg er nået dertil i mit årshjul nu. Indeliv med afstikkere ud, når der skal traves en dejlig tur eller rives lidt blade sammen. Indeliv med alt det dejlige, som jeg elsker, når kulden og mørket kommer snigende. At læse og bage, at strikke og brodere, at klippe og folde og lytte til en god podcast i sofahjørnet med et dejligt tæppe over benene. Et mere stille og tilbagetrukket liv end i sommerens lyse måneder.
Jeg elsker årets gang og nyder at lade mit tempo tilpasse sig årstiderne. Det er en slags livsluksus for mig.
Dette efterår vil jeg lægge min telefon fra mig, ikke helt og aldeles, men dog i langt højere grad end det er lykkedes mig at gøre i de seneste år. Jeg har et ret automatiseret skærmforbrug, det vil jeg gøre op med. Jeg vil være mindre der og mere her.
Her som i her tilstede i nuet og her på denne platform, på bloggen, som giver min hjerne mere ro og bedre mulighed for flere ord, for de er der jo, ordene, lige inden i og jeg mærker en stærk længsel efter at lade dem strømme. Og her er der netop plads til, at de bare kan løbe afsted, ingen andre end mig selv bestemmer, hvor mange anslag, der kan være på en enkelt gang.
Måske vil jeg ikke engang sige noget om, at jeg bruger tiden her, måske vil jeg bare skriver mest for mig selv og skulle nogen komme forbi, så vil det jo også være hyggeligt nok. Hvis nogen ville tage sig tiden til at “snakke med” og have deres egne reflektioner i kommentarsporet, så ville det være helt forrygende. En samtale bølgende frem og tilbage på skrift.
Mon ikke der er en helt generel tænkning om, at bloggene er døde, at den platform ikke har sin berettigelse længere? For langsomt, for omfangsrigt, for besværligt, for krævende? Det er det, jeg oplever, når der tales om det, mens der så i samme åndedrag siges: Men det var nu også bare virkelig hyggeligt, det var mere nærværende, det var mere roligt. En selvmodsigelse der vil noget!
Jeg kan li’ bloggen. Jeg kan li’ ordene. Og jeg bestemmer jo heldigvis selv her, så jeg kan da bare skrive solen sort og vinteren lys og let, hvis det er det jeg vil.
Og havde det ikke været verdens største narrehat, der havde sagt noget om at gøre et eller andet great again, så havde jeg altså brugt den vending, men for mig skyld behøver den faktisk aldrig nogensinde blive brugt i noget som helt other afsnit. Jeg tror bare, at jeg vil sige, at jeg tror på det, på bloggen og på ordenes kraft og den energi, som de faktisk giver mig, mens jeg lader dem rulle fra hovedet og ned igennem armene og ud på tastaturen.
Hverken fugl eller fisk – hverken op eller ned – hverken sort eller hvidt – hverken ja eller nej.
Det bliver der omkring jeg kommer til at skrive.
For mig.
Og måske også for dig.

Vintermånederne kalder på varme krydderier. I vores drikke, i vores gryderetter og selvfølgelig i vores bagværk.
Den mest klassiske og nok nemmeste krydrede søde bid at bage er nok ølkagen. Få ingredienser, nem og hurtig forberedelse og af bunker af velsmag og jeg vil gerne dele min udgave herunder, der er såmænd ingen revolution i min måde at vælge ingredienserne til min ølkage, det meste er helt klassisk og ligner alt det, som kan finde i andre opskrifter. Jeg har bare ikke det bedste forhold til tørret ingefær, så derfor bruger jeg frisk og i går undlod jeg også kardemommen, fordi jeg ønskede at bruge den i det piskede smør, som jeg ville serveres sammen med ølkage.
Ølkage på Anne-måden
500 g hvedemel
500 g brun farin
1 mørk krydret øl (3.3 dl)
2 spsk stødt kanel (jeg er rigtig glad for Ananda’s kanel fra Mill og Mortar)
1 tsk stødt nellike
1 stor tsk frisk revet ingefær
revet skal af en øko appelsin
2 tsk natron
(evt 2 tsk stødt kardemomme)
Rør alle ingredienser sammen. Grundigt. Sørg for at der ikke er små klumper af mel eller farin i dejen.
Hæld dejen i et stor bagepapirsforet rugbrødsform og bag ølkagen ved 175 gr i ca. 50 min.
Når kagen tages ud af ovnen og formen, kan den med fordel pakkes ind i et meget fugtigt (hårdtopvredet) viskestykke, mens den køler af. Ingredienserne i kagen giver den den klassiske seje krumme og også en meget sprød og lidt skarp skorpe, dette kan dæmpes med det fugtige viskestykke.
Ølkagen holder sig nemt frisk i 2-3 dage.
Ølkage smager vidunderligt med smør på. Lun kage, køligt smør.
I går lavede jeg en pisket smør med kardemomme og safran.
Pisket smør er rigtigt nemt at lave og giver lige det ekstra til serveringen.
Jeg piskede 200 g smør, der havde stået på køkkenbordet i nogle timer, med 2 tsk citronsaft. Man kan alternativt piske op med kærnemælk eller fed creme fraiche i samme mængde som citronsaft. Pisk længe og grundigt for fuld skrue, smørret skal piskes lyst og luftigt. Jeg tilsatte 2 tsk friskstødt kardemomme og 1 tsk. safranpaste, som jeg altid køber med hjem fra Sverige. Et hurtigt lille safranfix, hvis jeg ikke har fået sat safrantråde i blød og bare MÅ ha’ safran.
Egentlig burde man jo altid ha’ lidt safran til at stå og trække i lidt cognac, rom eller lign, når vinteren lægger sig over landet. Alternativt en sukkersirup, hvis man gerne vil undgå %. En iblødsætning trækker både smag og farve ud af de små tørrede støvdragere og er altid en god idé, når man skal bage med safran.
Men sød bagning med safran det kommer vi til. I dag var det “bare lige” den altid dejlige klassiske ølkage.

Når efteråret rammer, så er der enkelte ting, som begynder at hviske juljuljul i mit hjem. Amaryllisløgene kalder på jord og papirsaksene fortæller, at nu må jeg gerne begynde at tænke på, hvad der skal produceres af pynt til denne vinters udsmykning af vinduer og flade.
Og så selvfølgelig basen til årets gløgg. Jeg laver den altid først i oktober, i år er det blevet til sidst i oktober pga Islandsrejse og andet dejligt. Men nu er den sat over og hele rummet her dufter af krydderier og appelsiner, duften af december. Det er jeg vild med.
Jeg er også ret vild med gløgg. Det er indbegrebet af hyggelige mørke vinterdage, varme inden i og dejlig stimuli af sanserne med alle de rare dufte, der stiger op fra den varme drik. Jeg drikker gløgg hver dag i december – hver eneste dag – og da også gerne lidt i november, så langt de fleste kopper jeg drikker er uden alkohol, og det gør helt det samme for mig, varmen og hyggen er der uanset hvad.
Herunder er det dog opskriften, hvor basen er spiritus, der får lov til at starte og så kommer der lidt info om andre måder nedenunder. Portionen kan blandes op med 3-4 flasker rødvin alt efter hvor intens en gløggsmag, der ønskes.
1 l. spiritus/vin ( det kan være rom, portvin, snaps, vodka, rester af vin)
10 g hele nelliker
15 g kardemommekapsler
3-4 kanelstænger á 6-8 cm
1/2 knust musketnød (giv den et gok med en hammer)
5 g hel allehånde
3 g peberkorn
2 dl grofthakkede rosiner
2 dl rørsukker
2 appelsiner – den ene i skiver med skal og den anden presset til salf
evt. 3 cm frisk ingefær
Lad alle ingredienser simre på komfuret i en dyb gryde i ca 30 min. Hold temperaturen under 90 gr, så der kun ses bittesmå bevægelser i overfladen. Hæld det hele i et stort skoldet glas eller anden beholder og lad det trække på køl i et par uger.
Sigt igennem en fin sigte og evt derefter igennem et klæde for at fjerne de sidste små “krummer”, det er ikke nødvendigt, men ønsker man en helt klar gløgg, så må klædet til.
Når basen er sigtet, så kan den opbevares som den er eller også kan den fodres med gode rosiner og mandelstykker, der så kan stå og blive små sprængfarlige bomber, inden de kommes i kopperne ved servering.
Som skrevet ovenfor så skal denne portion blandes med 3-4 flasker vin. Så der er til en god flok gæster eller en god flok dage, hvis man bare er sig selv eller et par stykker, der samles om gløggen.
Mange bruger vanillestænger i deres gløggbase, det synes jeg er spild af en delikat og ret dyr råvare, de mange andre krydderier vil helt overdøve den fine vanillesmag. Stjerneanis kommer jeg heller ikke min gløgg, jeg elsker det krydderi, men synes, at det kan blive en anelse for gennemtrængende netop her. Jeg kan dog godt finde på at smide en hel stjerneanis i koppen ved servering, mest for det dekorative i det.
Ønsker man en alkoholfri gløgg så kan man bytte spiritussen i opskriften herover med en god liter mørk saft som f.eks. solbær eller hyldebær. Jeg bruger 0.5 liter koncenteret saft sammen med 0.5 liter vand. Fremgangsmåden er præcis den samme og ved servering blander jeg blot basen med mere saft, dog i et lidt mildere blandingsforhold.
Man kan også bruge basen til en lys gløgg ved at bruge udelukkende klar/lys spiritus i basen og så blande med hvidvin ved servering.
På samme måde kan den røde saft byttes ud med en lys, f.eks. hyldeblomstsaft.
Og selv om jeg jo synes, at man selv skal lave sin gløgg, så ved jeg godt, at det får man ikke altid gjort, og selv om jeg egentlig helst heller ikke vil reklamere, så vil jeg alligevel lige gøre det og anbefale, at hvis man lige pludselig står og mangler en flaske gløgg, så skal man købe sig en flaske Blossa. En svenskproduceret gløgg, der kan købes i flere udgaver med forskellige alkohol procenter og også en rigtig god alkoholfri og endda også i økologisk udgave, men lige den kan vist kun købes i Sverige.
