Der er stor inspiration at finde, når man scroller Instagram. Haveinspiration, strikkeinspiration, rejseinspiration, indretningsinspiration og ikke mindst inspiration til mad. Jeg bliver inspireret hver eneste dag, gemmer masser af opslag ned i de kategorier, der giver mening for mig, så jeg nemt kan finde tilbage til det, der fristede, mens jeg var på vej ned over skærmen.

Jeg får også opslag i indbakken, opslag, som andre tænker, at jeg vil juble over og temmelig ofte rammer afsenderne rigtigt. Forleden sendte min allerbedste gymnasieveninde en fransk opskrift på en skøn forårsret med hvide asparges, pasta og et pocheret æg på toppen, jeg fik et akut anfald af løbende mundvand. Jeg gjorde mig ikke den umage at læse teksten under den lille reel, men kiggede den 2-3 gange og så var det hele lagret i den altid arbejdende kokkehjerne. Asparges, pasta, bacon, æg, parmesan og et fedt mælkeprodukt.

Jeg lavede min version i aftes, valgte en lidt anden proces end i videoen, da jeg hellere vil arbejde smart end hard og jeg deler herunder en anneficeret udgave af det, som nærmest må være den mest delikate tallerken forår, jeg længe har spist. Opskriften er til 3-4 personer alt efter sultens størrelse, jeg har vejet af og regnet på baghånd, men det skal man ikke være bange for, for lige på det område virker min brækkede hjerne perfekt.

300 g tørret pasta – jeg brugte Rigatoni i en lidt kort udgave

1 stort bdt friske hvide asparges

100 g tørsaltet bacon af god kvalitet skåret i tern

4 dl grønsagsbouillion

1/4 piske

60 g friskrevet parmesan

2 tsk citronsaft

3-4 æg

Flagesalt og friskkværnet peber

Lidt eddike til vand, der skal bruges til at pochere æggene i

Friske urter – jeg brugte meget fintsnittet purløg og kørvel

Bræk den træede del af de hvide asparges og skræl derefter fra lige under aspargeshovedet og ned. Hold aspargsen på din flade hånd og vær lidt nænsom. Skær de øverste 6-7 cm af hver asparges (altså hovedet og lidt af “stokken”) og lægge disse til side, de skal først tilberedes lige inden servering. Skær resten i 2 cm tykke stykker og sauter dem på en pande i smør; når stykkerne er let brunede hældes bouillon på og det hele koges godt igennem i 5-6 minutter.

Mens aspargesstykkerne sauterer, sættes en pande over til bacon, kom bare baconternene på den kolde pande og lad fedtet smelte langsomt af, mens panden varmer op. Steg ved middel varme og skru først op til sidst, hvis baconen mangler et drøn for at blive sprød. Steger man ved for hård varme hele vejen igennem, så ender man med at overdøve den fine salte smag med en for intens smag af røg. Når baconternene er brune og helt sprøde, tages de af panden og lægges på et stykke køkkenrulle. Der sker ikke noget ved, at ternene bliver let afkølede, du får nok at gøre i slutspurten med at pochere æggene.

Imens aspargesstykkerne koger, sættes pastaen over i kogende vand og koges møre efter pakkens tidsangivelse.

Sæt også en sautepande eller anden dyb bred gryde over med vand tilsat salt og en sjat eddike, så den er klar til at pochere æggene 5 min før servering.

Hæld nu aspargesstykkerne og væden herfra op i en kraftig blender og tilsæt fløde, parmesan, citronsaft, salt og peber og kør det hele på høj hastighed i et minuts tid. Den kraftige tur i blenderen giver dig en homogen og luftig sauce, der ikke behøver en tur igennem en sigte, blend til du er sikker på, at alle de små aspargesstykker er helt purerede. Hæld aspargessaucen i en lille kasserole og smag til, sæt kasserollen på lav varme på komfuret. Hold øje med den, så den ikke sætter sig på bunden af kasserollen.

Så mangler du de smørristede aspargeshoveder og de pocherede æg.

Aspargeshovederne ristes på panden i smør, lad smørret bruse af og blive let nøddebrunt, før du kommer hovederne på, ryst panden jævntligt, så hovederne får farve hele vejen rundt. Pas på dem, de skal ikke steges i smadder, men blot brunes flot, det tager ca 2-3 min.

At pochere æg er ikke så vanskeligt. Når altså først man kan! Som med så meget andet, man øver og pludselig er den der.

Hvis man skal lave flotte samlede æg, så er det vigtigt at æggene er friske, at vandet koger, når man forsigtigt hælder æggene i, og at vandet er i bevægelse. Slå hvert æg ud i et glas, 1 æg 1 glas, og sæt dem tæt på gryden, så de kan hældes i hurtigt efter hinanden. Skab bevægelse i vandet ved at piske hårdt i det umiddelbart før, at æggene hældes i. Hæld tæt på overfladen, det duer ikke at plumpe i fra højden. Lad æggene koge i 3 min og fisk dem så forsigtet op med en hulske.

Ved serveringen hældes aspargessaucen over den afdryppede pasta, vend godt rundt, så dem, der skal ha’ pastaen fra bunden af gryden, ikke bliver snydt for den delikate sauce. Anret pastaen i dybe tallerkener, læg et procheret æg i midten, drys med den sprøde bacon og læg de smørstegte aspargeshoveder sirligt på. Top med urter og nyd nyd nyd hver eneste bid, det er smagen af forår på luksusmåden.

En dag ræsede jeg forbi et billede af små brød med stegte kartofler på toppen et sted på Instagram og “smagen” af billedet lejrede sig i min indre madbank. Sådan en er god at ha’ til at hive idéer fra senere og kartoffelbrødsidéen kom ret handy ind ift lidt håndværkerforkælelse forleden.

Min have myldrer med stærke mænd i arbejdstøj. De bygger skur og overdækket terrasse og ordner inderkant i mit drivhus. De saver, sømmer, borer og banker og hører masser af radio og sørger så godt og flot for, at min have bliver endnu skønnere end den var i forvejen. Og det skal de selvfølgelig takkes for undervejs med lidt søde sager, lidt mandemad og opmuntrende kulhydrater.

I fredags lavede jeg frokost til dem. En slags rejsegildemad på Anne-måden. Pølser og brød.

De små kartoffelbrød, kartoffeltortillas, kålpølser, ringridderpølser og syltede løg.

SMÅ BRØD MED KARTOFFEL 10-12 STK

4 dl lunkent vand

20 g gær

2 tsk flagesalt

1 tsk honning

3 spsk mild olivenolie

400-450 g tipo 00

600 g små kartofler

4 fed hvidløg

1/2 dl olie

1 spsk tørret rosmarin

salt

Ekstra flagesalt og rosmarin til drys på toppen.

Skær kartoflerne i mundrette bidder og vend dem i knust hvidløg, olie, salt og rosmarin. Sæt dem i en kold ovn, tænd på 195 g og bag kartoflerne i ca 30 min.

Når kartoflerne er sat i ovnen, laves dejen. Det er vigtigt, at den æltes rigtigt godt igennem for at få en god struktur og en dejlig luftighed.

Opløs gæren i den lunkne vand, tilsæt salt, honning og olie. Tilsæt det meste af melet og kør gerne dejen på høj hastighed på røremaskinen i 8-10 min. Dejen skal være fast med stadig godt klistret. Hellere for lidt mel end for meget.

Lad dejen hvile, mens kartoflerne bliver klar.

Tag kartoflerne ud og lad dem køle let, mens dejen deles i 10-12 lige store stykker og trækkes til store forholdsvis flade boller. Fordel kartoflerne på brødet og fordel olien fra kartoffelfadet over bollerne, drys med salt og rosmarin.

Lad dem stå 10-15 min, mens ovnen bliver godt varm

Skru ovnen op på 220 grader og bag de små brød i 13-15 min.

Den korte hævetid gør, at brødene er bedst nybagte. Det kan selvfølgelig sagtens lade sig gøre at lave dem på en koldhævet dej, jeg havde bare brug for hurtig ekspedition den dag, jeg lavede dem. Laves både dej og kartofler klar dagen før, så har man hurtigt små skønne brød, der vil være gode til et frokostbord, som tilbehør til gryderetter og grill og alt muligt andet.

Kartoflerne kan nemt skiftes ud med små tern af bagt squash og et drys af smuldret feta. Eller både af rødløg bagt med et lidt farin på toppen. Jeg vil anbefale, at man tilbereder de valgte grøntsager, før de kommes på de flade boller, det giver meget mere smag og man undgår også, at de smider vand ned i dejen under tilberedningen.

Vi spiser mandagsmiddag på en tirsdag igen i denne uge. Baby på vej laver forskydninger i vores ellers faste ugeskema, sådan er det og sådan må det så gerne være.

Middagen i dag er bygget over en rest kraftig kokos-karrysuppe fra i lørdags. Den bliver tilført en hel masse grønt, blandede rester fra fryseren og lidt friske sager, der sauteres i hed olie, hvidløg og ingefær, inden suppen hældes på og det får lov til at koge lidt ind sammen. Jeg har købt nogle billige minutbøffer, som ellers er min totale yndlingsaversion, mage til kedeligt stykke kød skal man lede længe efter, men nu har de marineret lidt, er blevet skåret i tynde tynde strimler og jeg regner med, at en meget varm og kort afbruning på panden kan holde dem lige præcis så møre og gode, at de er værd at spise. Jeg vender dem ikke ned i saucen, men topper dem op ovenpå sammen med lidt frisk koriander og måske lidt ristet kokos.

Vi skal ha’ kogte hvedenulder og bagte grønne bønner til. Og så den salat, som jeg vil dele med jer her.

Friske spirer og urter efter smag/behag.

Snit det friske grønt tyndt tyndt tyndt. En mandolin er efter min mening uundværlig i et salatkøkken. Jeg brugte en julienneskræller til squashen i dag, men kan lige så nemt finde på at skære lange brede bånd af den på mandolinen. Bland de grønne snittede sager med let hånd og fordel dem i en lidt høj bunke på et fladt fad.

Skær både af pomelo og mango og anret dem i siden af fadet, så der er lidt mulighed for frit valg på frugten.

Drys rundhåndet med saltede peanuts og urter. I dag har jeg brugt koriander, bredbladet persille og ærteskud.

I skåle ved siden af serveres: Friterede nudler, sød chilisauce og den dressing, som listes op lige her under:

1 dl frisk limesaft

1 dl koldt vand

2 dl neutral olie eller sesamolie

2 fed hvidløg

1 nip chiliflager

1 spsk peanutbutter

Kom alle ingredienserne i et højt glas og blend med stavblenderen til cremet konsistens.

De friterede nudler er ikke nødvendige, men meget sjove. De smager ikke af det store i sig selv, så de skal ha’ noget krydder efter stegning for at være med til at give noget til salaten.

Jeg koger de tørrede nudler ganske kort op, sigter det varme vand fra og kører godt med iskoldt vand på. Når de er helt kolde friteres de i solsikkeolie til de er sprøde. Lægges på fedtsugende papir eller køkkenrulle og drysses med chiliflager og salt. Hvidløgspulver kunne også gøre det, hvis man ellers bryder sig om den slags.

Jeg bliver mobbet lidt af mine piger for mine ind imellem ret overordnede opskrifter eller anvisninger, hvis vi nu skal kalde dem det. F eks synes de, at det er hylende morsomt, at jeg kan finde på at skrive en ingrediensliste og så bare notere: Som klassisk gærdej. Ælte, hæve, ælte, forme, hæve, bage.

Sådan gør jeg også på job med ca 10.000 små sedler i årets løb. Jeg får en idé, skriver ingredienserne ned og hvis jeg tænker, at man kan regne ud, hvordan man skal gøre, ja så skriver jeg det ikke.

Men altså – det går jo. I er gode til at spørge, hvis noget er uklart for jer. Og det må man rigtigt gerne. Især i kommentarfeltet, for det kan andre også få noget ud af. Hvis I skriver en privat besked til mig på messenger, fb eller ig, så ser andre den ikke og måske sidder de med de samme spørgsmål, som I selv gør.

Og så vil jeg holde lidt fast i retten til at gøre det, sådan som jeg gør. Ind imellem meget detaljerede opskrifter og andre gange bare overordnede anvisninger. Hvis vi skal bruge eksemplet med den klassiske gærdej, så tænker jeg, at det er muligt at google sig frem til, og hvis ikke, så svarer jeg gerne. Måske lidt overordnet men et svar skal man nok få. Jeg vil gerne ha’ en let tilgang til bloggen og skriverierne og det kan jeg kun ha’, hvis jeg kan skyde lidt fra hoften.

På samme måde er det med billederne her. De bliver taget, mens jeg laver maden og uden særligt regi eller lyssætning og bliver postet 100% i den form, som de er taget, jeg redigerer ikke. Aldrig. At dele min madglæde skal være en umiddelbar og legende let ting at gøre, for ellers får jeg det ikke gjort, og jeg vil hellere lege med mere mad, flere retter, flere nye ting, end at jeg vil stå i mit køkken 2-3 gange for at lave den samme ret til foto og finjustering, det kommer ikke til at ske.

Smagen skal være i top og det kommer den til være ved første servering langt de fleste gange, jeg smager og justerer mange mange gange ved hvert måltid. Jeg har lavet mad siden jeg var 9 år, har taget en uddannelse i samme og arbejder hver dag intenst med at optimere smage og strukturer, så jeg ved, hvordan det skal gøres. I alle tilfælde når vi taler om den måde, som jeg laver mad på. Råvarerne så tæt på oprindelig form som muligt og med et minimum af processer.

Skulle jeg lære at lave mad på molekylær måden, så skulle jeg starte forfra, men her i det klassiske Anne-køkken, der er jeg på sikker grund. Og det er fint nok, godt nok, rart nok, ordentligt nok. Og det deler jeg gerne af.

Med og uden grundige opskrifter. Og med en mulighed for at I kan råbe højt, hvis der er ting, som jeg skal være lidt mere forklarende omkring…
