1980’erne. Man kunne være disc’ker, flipper og bz’er. Og bondejokker.

Man kunne rejse til USA og gå på highschool og man kunne tage i kibbutz i Israel.

Og så kunne man selvfølgelig være og gøre en hel masse andet.

Jeg tog til Israel. Blev brun, forelsket og chubby. Af avocadoer i bjerge og Milky i strømme.

Jeg tog hjem igen, forblev brun, afforelsket og skinny. I et par årtier i alle tilfælde.

Vi spiste rigtigt godt i den kibbutz, jeg var i. Grønt og varieret og et kæmpe udvalg til alle måltider, det var ikke svært at spise sundt, men det var også ret let ikke at gøre det. Jeg havde tjans i kibbutzens turistkiosk, hvor der var stakke af bløde nybagte pitabrød og fedtet falaffel, hummus hummus baba ganoush baba ganoush og is is is is is. Jeg blev blød og rund.

Ind imellem var der en rigtig god børne dessert i spisesalen efter det kolde aftenmåltid. Blød chokoladecreme, en mellemting mellem Nutella og budding og i en skål ved siden af stod der creme fraiche 50 %, som jeg faktisk aldrig havde smagt før. En stor skefuld chokoladecreme og en stor skefuld af 50’eren – lige ned i løgneren og ud på sidebenene.

Jeg har tit tænkt på, hvordan man mon lavede den dessert, blød som Nutella men med meget mere smag af ægte chokolade. Jeg har tænkt og så ikke fået gjort mere ved det. Indtil nu. For jeg fik endelig spurgt i the holy land og idet jeg fik svaret: Det kunne måske være Milky?! så huskede jeg selvfølgelig navnet.

Der findes masser af forskellige opskrifter på Milky, herunder er min, lavet med udgangspunkt i et par andre men tilpasset mine lidt mere voksne smagsløg.

Til 5 små portion af 1 dl:

60 g meget mørk chokolade

3 dl letmælk

1.5 spsk maizena

1 dl sukker

1 nip flagesalt

1 tsk vanillepasta

1 spsk kokosolie (neutral) alternativt 1 spsk smør

Hæld 2/3 af mælken og sukkeret i en lille tykbundet kasserolle og kog det op. Rør maizenaen ud i resten af mælken og pisk det i den kogende mælk. Kog det godt igennem i et par minutter.

Tag kasserollen af varmen og pisk den finthakkede chokolade, kokosolie/smør, vanille og salt i og pisk til chokoladen er smeltet. Hæld den varme creme op i små portionsglas og sæt dem på køl.

Ved servering pyntes med creme fraiche. Du kan nemt få fat på 38% øko i Rema eller måske endda Arla Unikas Double Fraiche til en ekstra festlig lejlighed. Lidt frisk mynte på er godt, synes jeg, et lille bær og lidt revet choko på toppen er også godt.

Det er en lille og meget intens dessert, eftermiddagssnack, fredagsslik eller hvad man nu vælger som tidspunkt for fortæring. Jeg synes, at en enkelt dl er passende. Og ellers kan man jo snuppe et glas mere.

I denne weekend er det 3 år siden, at vi flyttede ind i det lille skæve gamle hus på landet.

3 helt og aldeles vidunderlige år, når jeg nøjes med at kigge på vores lille lune bo og ikke på alt det, som er forgået rundt omkring, sådan med livet altså.

Uden overdrivelse overhovet så kan jeg sige, at jeg hver evigt eneste dag er taknemmelig for, at jeg bor lige netop her. På landet tæt på byen og omgivet af smuk smuk natur og en hel masse fred og ro.

Når jeg drejer ind på den lukkede vej nede fra landevejen, så falder pulsen og smilet breder sig over mit fjæs, hver dag tænker jeg: Hjem. Lige her. Jeg er så heldig heldig heldig.

Man kører en lille kilometers penge fra landevejen op gennem skoven og ned af en slyngende lille vej mod farmen. Ned igennem det sidste sving og så kan man se søen, husene, hestene, haverne og juletræerne. Hjemme.

At komme til at bo her var et lykketræf uden lige, historien er så fin og sjov og vi taler tit om, at det lykketræf faldt på det absolut helt rigtige tidspunkt. Det kan faktisk slet ikke diskuteres.

I dag har vi fejret det med en lille kage. Fejret et dejligt fællesskab uden tvang og forpligtelser, et fællesskab, som alle trives i og med. Sammen hver for sig blev “moderne” her på farmen, før nogen kendte til lockdown og restriktioner, som vi alle kender alt for godt nu. Sammen hver for sig på farmens måde får heldigvis aldrig en negativ klang eller et træt suk, det er tvært imod altid rart at tænke på.

Kagen har jeg fået inspiration til på Spis Bedres instagram side. Jeg er ret autonom, når jeg er i køkkenet, så der er trukket lidt ud af opskriften og tilført lidt andet, intet er skrevet ned og jeg kan sagtens anbefale opskriften helt som den er.

I det hele taget så er roulade altså et lidt for overset bagværk. Sådan en fætter er jo lynhurtigt lavet og kan laves af få ingredienser og med fyld på 100 måder. Mere roulade til folket, siger jeg bare.

Og mange flere år og jubilæer her på farmen på landet til mig, siger jeg faktisk bare endnu mere.

Lockdowndagene har fået mange til at gå amok i surdejsbagning og simreretter, det har været herligt at følge; jeg jubler altid, når nogen lægger lidt energi i deres køkken, det er så godt på flere plan, synes jeg.

Måske skulle vi også kigge lidt på syltning? Syltesager kan tage madlavningen til nye niveauer og give komplekse smage, som ikke er enkle at tilføre på andre måder. At sylte grønt kan være med til at holde madspild nede og også være med til at sende en portion slowliving ind i dit køkken. Vel at mærke hvis du overgiver dig til processen og de små fine trin heri og ikke bare suser afsted for at komme til endt produktion og produkt.

Lidt som med surdejen – det tager tid! Men det produkt man står med bagefter er det hele værd.

Surdejen kræver lidt fingerspitzgefühl, syltning kræver ikke ret meget andet end at man er omhyggelig med at skolde sine glas, hvis det er sådan man vil opbevare. Jeg er selv nok mest til køleskabsopbevaring.

Et glas pickles eller to i køleskabet er en skøn ting at ha’. De kan spises, som de er, som topping på smørrebrød, tilbehør til varme retter og så er de jo perfekte at lave hjemmelavet remoulade af, det er vel deres kerneydelse, hvis man kan sige sådan. Jeg har lavet denne portion, fordi jeg vil bruge pickles som topping på pulled beef dogs en af de kommende dag. Briochebrød, pickles, syltede løg, stegte løg og karse. Jeg kan allerede smage det.

Til en god portion skal der bruges nedenstående. Der bliver nok til, at du også kan forære et glas væk:

800-1000 g blandede grøntsager. I dag brugte jeg squash, peberfrugt, gulerod og blomkål

40 g havsalt

2 spsk sennepspulver

1 spsk karry

2 spsk gurkemeje

1/2 tsk chiliflager

1 spsk fennikelfrø

1 spsk korianderfrø

25 g maizena

5 dl eddike – jeg brugte en blanding af lagereddike og æbleeddike. Half and half.

125 g rørsukker

1 spsk honning

Vask og snit alle grøntsagerne fint. Jeg bruger både min mandolin og en kniv. Da grøntsagernes eneste “tilberedning” er, at de vendes i den varme lage, er det vigtigt, at de er snittet så fint, at varmen fra lagen kan nå godt ind i alle de små stykker grønt.

Drys grøntsagerne med salt og vend det godt sammen. Ind i køleskabet med dem i 12-24 timer. Næste dag tages de ud og hældes op i en sigte, så de kan dryppe godt af, inden de vendes med lagen. Det er ikke nødvendigt at skylle grøntsagerne, mængden af salt er tilpasset portionen og giver de færdige pickles en god balance imellem salt og de øvrige krydderier.

Mål alle krydderierne af og bland den med maizenaen. Jeg knuser ikke mine fennikel- og korianderfrø, jeg kan godt li’ det lille pop af krydder, når der tygges i de hele korn. Bryder man sig ikke om det, så kan man lige knuse frøene let i morter eller med kniv på skærebrædtet.

Kog eddiken op med sukker og honning. Når den er på kogepunktet, så skru en anelse ned og drys så forsigtigt krydderblandingen ned i eddiken, mens du pisker godt. Ingen klumper, tak. Lad den gule sauce koge godt igennem, sådan ca i fem minutter, hold øje med at den ikke sætter sig på bunden. Vend de afdryppede grøntsager ned i saucen, få vendt godt rundt, så alle de små bidder er dækket godt. Hæld din pickles på skoldede glas eller i en condibøtte. Bøtten skal på køl, for at det skal kunne holde sig, de skoldede glas med tætsluttende låg kan sagtens stå ude, hvis du følger den gode gammeldaws måde at skolde låg og glas på.

Egentlig skal man lade sine pickles stå og trække i min. 4 uger, for at de kan udvikle den fulde og mere komplekse smag, men altså – hvis man skal bruge pickles, så skal man jo bruge pickles og de smager altså dejligt allerede den første dag.

Denne portion nåede ikke engang at køle af, før vi spiste et par skefulde til nogle synnejyske kålpølser og hjemmebagt rugbrød. Måske skal jeg også lige ha’ en skefuld i dag på den gode tørre fennikelspegepølse.

Og mens jeg så tygger mig igennem den, så vil jeg forsøge at sætte mig lidt mere ind i, hvordan jeg får anbragt billederne godt i indlæggene her på bloggen og hvordan jeg får dem til at få de dimensioner, som jeg synes passer bedste. Indtil videre halter det voldsomt med det, men beslutningen er: Hellere lidt dårligt layout end ingen nye indlæg! og det forsøger jeg så at holde mig selv fast i, selv om jeg får tørre øjenbolde af at se på nogen, der ikke er så indbydende, som de go’e gamle indlæg er.

Det går nok. Og det går endnu bedre med hjemmelavede pickles. Sådan er det.
