I fredags, da vejret var rigtigt gråt og vådt og bare kaldte på sofahygge og god film, bagte vi bagels.

Brune søde bagels med kanel og sultanas i, en rigtig lækkerbid med lidt smør på til en dampende kop te.

 

Egentlig har jeg altid synes, at processen omkring bagels var så “irriterende”, hvis man kan bruge sådan et ord om køkkenaktivitet, og er ofte sprunget over, selv om lysten til at fortære et par nu nok har været der.

I fredags måtte de bare til og  –  hånden på hjertet  –  det tager ikke længere tid end at bage almindelige boller, så det er dumt at springe en stak af de søde runde over, hvis man vil nyde lidt godt til eftermiddagens te.

 

Søde og lækre som var de en kage, men noget sundere, og det behøver man da ikke ligefrem at pive over…

 

16-20 STK KANELBAGELS

3 dl håndvarmt vand

1 dl A38

50 g gær

2 tsk flagesalt

2 spsk rørsukker

1 spsk honning

1 tsk kardemomme

3 tsk kanel

2 små håndfulde sultanas eller alm. rosiner

2.5 dl speltmel

Ca 10 dl hvedemel

 

Dejen fremstilles som en alm gærdej, ikke noget hokuspokus her. Altså røres gæren ud i det lune vand og resten af ingredienserne tilsættes. Dog tilsættes hvedemelet lidt af gangen, dejen må ikke blive for hård.

Ælt rigtigt godt igennem, når den rette konsistens er opnået, blød og let fedtet, æltæltælt som blev du betalt for det.

 

Dejen hæver under klæde i ca 30 min.

Del dejen i 16-20 stk, rul derefter lange orme, der formes til o’er. Drys her en anelse mel på bordet. Vrid evt enderne om hinanden, så de ikke løsnes under kogning. Jeg drejede den ene ende et par gange rundt om o’et og det holdt rigtigt fint på det hele.

Og så kommer den del af bagelsbageriet, som jeg egentlig ikke gider, men for pokker altså, det tager jo ikke længere tid, end en efterhævning ville gøre!

 

Sæt en sautepande eller gryde med stor overflade over blusset. 6-8 cm vand hældes i og det koges op.

Læg nu 2-3 bagels i det kogende vand og kog dem 2 min på den ene side, vend dem med og lad dem koge 2 min på den anden.

 

Løft de kogte ringe op med en hulske og læg dem over på en bageplade.

Fortsæt til alle dine bagels er kogt.

Pensl med sammenpisket æg og så i ovnen med dem.

200 grader i ca 20 min.

 

Og så er det ellers bare at bide og gumle.

Måske er det bagels, der skal forsøde din søndag eftermiddag…

    Ej de ser altså gode ud. De må prøves, mon ikke pigerne vil hjælpe, nå bare der kommer så lækre beagles ud af anstrengelserne. Lige nu ventes der spændt på “grydebrødet”. God søndag til dig og dine.

    Jeg freestylede lidt og har netop hevet en lidt anden version af dine bagels ud af ovnen – salte af slagsen med ost, solsikkekerner og sesam – de er VILDT gode! Har ALDRIG kogt bagels før – en mærkelig fornemmelse men det virker! Tak for inspirationen….

    Det er meget nemmere at rulle en bolle flad med kagerullen – derefter stikker man hul i midten med en finger og forstørrer hullet med to tommelfingre. Lav det ikke for lille, det svinder ind ved hævning og bagning.
