Lørdag kalder på hjemmebag, gerne af den lette slags, men selvfølgelig af den lækreste skuffe.
Jeg havde lyst til noget let, luftigt og anti-chokolade, til små sprøde bidder med smag af sol og sommer og fremmede lande.

Så i skålen røg ingredienserne til Madeleines, dem elsker vi alle og de tager bare 5 minutter at røre sammen.
De har ofte været en del af fødselsdagskagebordet her i familien og min gamle farmor har ind imellem høfligt udbedt sig en portion, når jeg skulle komme på visit.

Jeg har både små og store forme til Madeleines, alle i silikone og de er jo lette at bruge, men jeg er udfordret omkring farven på de færdige kager, for i de bløde forme kan jeg ikke få dem så gyldne, som jeg kan i de gamle af metal.
Men sådan må det være, de er sprøde nok og så er det i orden med lidt mindre solbrændthed i bekvemmelighedens tegn…

Madeleines tager altid kegler.
Alle elsker dem og deres sirlige form gør sig rigtigt godt på et fint kaffebord.

Lige her hos Kunst og Køkkentøj kan man bestille sig en form, både i metal og silikone. En engangs-investering, som kan glæde og fornøje i mange bageår.

I dag brugte jeg den store form, 20 fine kager har vi, eller havde vi, for der er prøvesmagt, her er hvad jeg brugte til sådan en omgang:

50 g smør
1 stort æg
40 g rørsukker
45 g hvedemel, i dag blev det italiensk tipo 00
1.5 spsk rosenvand
Revet skal af 1/3 citron.

Lidt ekstra smør til formene.

Pisk ægget hvidt og luftigt med rosenvand og citronskal. Pisk indtil der ikke er flere sukkerkorn tilbage og massen er helt glat.
Vend derefter forsigtigt melet i, vend vend vend ikke rør rør rør, og til sidst vendes og foldes det smeltede letafkølede smør i.

Sæt dejen på køl i ca 30 min og kom derefter en passende mængde op i hvert lille hul i din Madeleine form.
Det passer med ca halv fyldt.

Bag derefter kagerne i ca 5-10 minutter alt efter størrelse af form.
Vend dem ud og afkøle dem på rist, drys med lidt flor inden servering.

Vi elsker den svage duft og smag af roser, men man kan selvfølgelig også give dejen smag af vanille, orangeblomstvand, et strejf af kardemomme eller lakrids, der er mange muligheder.
Og du kommer let til at prøve dem alle af, for 1 portion er sjældent nok, når først man er i gang.

    Jeg har aldrig turde at kaste mig ud i at bage dem…ved egentlig ikke hvorfor. Tror det er uvidenhed der har givet frygten/respekten? Lidt ligesom nogle har det med macarons:-)

      Det er så nemt, Michelle, ret meget nemmere end macarons, hvor man jo har et hyr med mandlerne før de er klar til at blive til dej 🙂

      Jeg er helt forelsket i den æggebakke, Marian, men kagerne var altså også i orden.
