I formiddag læste jeg om verdens bedste kyllingeburger, en Oprah en af slagsen, og da jeg sad der og læste om de ingredienser, der ligger mellem de stykker brød, ja der vidste jeg med det samme, at dette her meget let kunne blive en ny livret i familien, i alle tilfælde for mig.

 

Mangochutney, citron, bladselleri, kylling, frisk mango og æble. Alt sammen livretter –

og nu i én og samme ret.

Næsten for godt til at være sandt…

 

Amanda og jeg har fået burgerne til aftensmad, jeg lavede dem næsten som Ulla beskriver på hendes side, men som med alt andet jeg har gang i i køkkenet, så bliver det sjældent som opskriften lægger op til.

 

Ingredienserne jeg brugte var de samme, minus tabasco, vi var løbet tør, så der kom en knivspids røget paprika i i stedet, ganske udemærket.

Og så snuppede vi faktisk også det hakkede kyllingekød i køledisken i dag, anti øko men vi overlever det nok, næste gang hakker vi dog selv.

Pakken med det hakkede vejede kun omk 500 g, men jeg gik all in på resten af de gode sager, brugte stadig fuld mål og vægt her og det virkede fint.

 

Forårsløg, æble og skrællede bladselleri fik en tur i foodprocessoren i stedet for med kokkekniven, det gik lynhurtigt og da vi var en anelse sene ud i aftensmadstilberedningen i dag, så var lynhurtigt rigtigt fint.

 

Persillen røg med i sammen arbejdsgang, den tager ikke skade af en tur på panden sammen med de andre ting, hvis blot man steger ved jævn varme og det gjorde “man” så…

 

Mens blandingen sauterede uden ret meget overvågning på det store komfur rørte jeg farsen sammen med de ingredienser, der ikke skulle på panden.

Jeg nåede også at snitte salat, agurk, skive en mango og dreje låget af en Hellmann’s.

Hurtigmad.

 

Jeg havde ikke tid til at lade farsen hvile i køleskabet, klokken var noget der ligner lidt i otte, vi var sultne og ville også gerne nå andet end maden denne aften. Så fluks efter jeg havde rørt æble/løg/selleri-blandingen i farsen blev den formet til 5 passende bøffer, der fik en bruning på panden, inden de røg i ovnen til færdigstegning.

 

Jeg steger stort set aldrig noget færdigt på komfuret – lige undtaget store røde bøffer – alt ryger i ovnen på panden v/ 190 grader og står så der, indtil det er “nok”.

Og mens det bliver det, så har jeg begge hænder fri til oprydning og opvaskemaskinefyldning, til afvaskning af komfur og klargøring af det sidste tilbehør.

Kokkerutiner, tror jeg…

 

Burgerbollerne var af købeslagsen i dag, men af den gode slags med nøglehul og økomærke, dem kan jeg godt anbefale, jeg er ellers meget glad for dem, som vi selv bager, men der var jo lige det med tiden, lørdagen var løbet fra os, men heldigvis på den hyggelige måde.

 

Og vi nøjedes i dag med det “originale” fyld af salat, agurk og mango, men jeg kan sagtens forestille mig, at burgeren også ville være lækker med lidt peppadew eller hjemmelavede semi-dried tomater eller en klat guacamole eller grillede peberfrugter. Der må eksperimenteres næste gang.

 

For der bliver helt sikkert en næste gang. Retten blev en livret ved første bid.

    KOKKERUTINER????? Det må io så fald være noget kun KVINDELIGE kokke lærte, for ham af min der jo i høj grad virkelig kan lave dejlig dejlig mad af – næææsten – enhver slags -må enten ha sovet i de timer eller ha siddet og skrevet kærestebreve hjem til mig (niks!) – for han ejer INGEN rutine udi at få ting fra hånden mans made snurre færdig endsige bare pøse lidt vand i brugte skåle og lign. OVERHOVEDET ingen snilde endsige rutine i dén retning!!! ;0) men om lidt laver han min føs’da’s-mad menu med en sovs der får englene til at synge og kødet der har fået lige dét der skal til osv. – og så er vi heldigvis mange herhjemme der er rigtig gode til at ta den der oprydnings og rengøringstørn, når “mesterkokken” har gjort det igen! ;0)
