Forleden så Laura og jeg en liste over madmoden lige nu, den indeholdt blandt andet:
Kål i alle afskygninger
Avocadomadder
Cheesecake
Tatar
Skyr
Hotdogs
Koldbrygget kaffe

Vi kunne hurtigt konstatere, at vi her hjemme er ret langt fremme i bussen på madfronten, for alle tingene her er nogen, der jævnligt dukker op på bordet.
Noget mere end andet selvfølgelig, for der er nu alligevel grænser for, hvor meget tatar man kan klemme ned i løbet af ugen og det samme med cheesecake jo.

Kål, skyr og avocado spiser vi i kilovis.
Hotdogs – af den helt ordentlige slags – hver anden uge.
Og kommer jeg i nærheden af en sous vide, så er jeg også gerne mand for straks at vacuumere et eller andet og smide det i.

Men koldbrygget kaffe, det var vi altså ikke nået til endnu.
Ikke i tirsdags i alle tilfælde.

Onsdag så det anderledes ud…

Tanke, teknik og fakta om koldbrygget blev min godnatlæsning tirsdag og onsdag morgen klokken rigtigt tidligt var jeg i gang med gode økologiske bønner og kaffekværn og kogt afkølet vand.
Op i stempelkanden med skidtet og så stod det ellers på køkkenbordet og bryggede igennem hele min arbejdsdag og også et par timer efter hjemkomst.

Planen var en svalende iskaffe på en smuk sensommereftermiddag.
Og sådan blev det selvfølgelig også.

Stemplet på kanden blev trykket i bund og en yderst velduftende kaffe blev hændt op i en kanden sammen med minimælk og en lille bitte anelse rørsukker.
I med stavblenderen og så ellers en heftig køretur, så der blev pisket luft og fylde ned i mælkekaffen.

Nogen kan godt li’ en mere plain iskaffe, hvor den kolde kaffe forsigtigt blandes med mælk i et glas med isterninger, men jeg er vild med den mere cremede konsistens, som en tur med stavblenderen giver…

Om morgenen havde jeg smidt en isterningpose med varm kaffe i fryseren, så de kunne være klar til om eftermiddagen og jeg var for en tid siden kommet forbi et billede med noget kaffe med myntesirup i, så det var der også planer om.

Om som det – heldigvis – ofte går her, så blev planerne ført ud i livet.

Iskaffe på koldbrygget kaffe med mynte og kaffeterninger.
Og det læskede og smagte så englene sang falset.

Den koldbryggede kaffe er meget mere rund og blød i smagen end en traditionel kaffe er og det synes jeg er rigtigt godt til en iskaffe.
Det er virkelig vigtigt, at man lader kaffen trække i mange timer, da det ellers bare vil være en gang tynd pjask uden ret mange smagsnoter. 10-12 timer er minimum.

Jeg brugte 150 gram friskmalede bønner til ca 7 dl kogt afkølet vand.
Og det var selvfølgelig mere kaffe, end vi lige skulle bruge den dag, men det holder sig fint på køl i nogle dage…

Myntesirup havde jeg i køleskabet, vi havde en flaske med hjem fra Frankrig, og det gik at bruge det som en lille smagsvinkler, men næste gang vil jeg koge min egen sirup, for den købte er lavet på pebermynte og jeg er gladere for den almindelige grønne mynte, som gror i vildskab ved mit drivhus.
Jeg vil koge 2 dl vand op med 2 dl rørsukker og 1/2 vanillestang og så tilsættes det boblende sukkervand 2 dl hakket grøn mynte.

Jeg forestiller mig, at blandingen bare skal koge 3-5 minutter og så ellers trække i kasserollen indtil den er kold og så kan bladene sigtes fra, før det hældes i et lille glas med låg og sætte på køl…

Vores koldbryggede iskaffe med mynte lavede vi sådan her:
halv kaffe og halv mælk og en lille dryp myntesirup gives en ordentlig tur af stavblenderen og smages evt til med lidt rørsukker.
Hældes over kaffeterninger og nydes i små rolige læskende sip, der bringer smilet frem.

Nemmere bliver det da ikke –
når man altså først lige har haft tålmodighed til at vente på at kaffe skulle trække.

    Umm Jeg er vild med Philz (i San Francisco-området) mint mojito iced coffee, men den er lavet med varmbrygget kaffe, måske skulle jeg prøve med en koldtbrygget kaffe herhjemme næste gang.

    Den lyder superlækker den opskrift! Må prøves! Vi er også hoppet på cheescakebølgen. Tror også der i løbet af de næste par år kommer en revival på fransk mad.
