Hvor er det dejligt at arbejde 3 min. cykeltid fra hjemmet, og ha’ en arbejdsplads, der er large i forhold til syge børn!!

Jeg drønede op på skolen og tog den 1.lektion; jeg har et lille morgenhold på bare 3 elever, der sammen med mig lægger strukturen for deres dag, der er faste rammer og tydelige aftaler, men også plads til at lægge lidt spræl ind. Vi bruger meget tid på snik-snak, der er meget at berette, når man er 9 år, og ser verden med andre briller, end de fleste andre gør…

Vi møder 7.45 på vores skole, så allerede 8.35 var jeg tilbage her hos de 2 syge små-tøser, og kan nu pleje dem et par timer, inden jeg skal til et møde, der ikke kan skubbes!
Et møde med amtet om timetildeling til 20.2-børnene til næste skoleår, jeg skal op på barrikaderne og i den grad argumentere for, at vi bliver tildelt lidt ekstra, så for en stund må de syge være syge for sig selv.
“Vi klarer os, mor, ellers sender vi bare en besked!!” siger de, fulde af fortrøstning; der går sport i at kunne selv, og hver især føler de, at de må passe lidt på deres søster, så det skal nok gå.

I går eftermiddags, alt i mens jeg stred mig igennem Connys meme, nursede jeg også husets patienter, og bagte pop-overs, en amerikansk ting, der smager lidt af vandbakkelser, men nærmest er en slags pandekagedej bagt i muffinform…

De er lynende hurtige at røre sammen, og mange børn er begejstrede for dem, vi kan li’ at få dem sammen med masser af frisk frugt skåret i bidder, her er de dog sammen med tørret frugt, der blev smidt på for farvernes skyld.

2 1/2 DL. HVEDEMEL
1/4 TSK. SALT
2 TSK. VANILLESUKKER
2 DL. SØDMÆLK
2 ÆG STR. L
1 SPSK. SMELTET SMØR

Det “tørre” blandes i en skål, og alt det “våde” tilsættes under kraftig omrøring, og dejen fordeles så i papirforme eller smurte muffinforme.
De sættes i en 225 gr. varm ovn i ca. 15 min., hvorefter varmen dæmpes til 175 gr. og de bages videre i ca.20 min.
Afkøles let, før de gives et ordentligt lag flormelis.

Jeg synes, at de bliver bedst ved alm. varme, altså minus varmluftfunktion…

    Jeps, Pop-overs er herlige – lidt seje men smager netop lidt af vandbakkelsesdej. Og næsten alle “rigtige” opskrifter er ens, så der er ikke så meget hurlumhej. Anna elsker, når jeg lige smider nogen sammen og fylder en mundfuld marmelade ind i dem eller lignende.
    Her er der også stadig sygdom, lægen venter senere i dag.

    Tak for opskriften, jeg syntes det er dejligt med alle disse forslag du lægger ud. Denne er endnu en af dem der skal afprøves.

    Hvad er det med al den sygdom i denne tid?
    Min yngste skranter, og jeg har længe troet, det var stress over alt det, hun gerne vil nå, blandet med lidt omskifteligt vejr. Men jeg synes, jeg på alle blogs finder syge børn. Er det simpelthen influenza-epidemi, altså den almindelige gammeldagse, eller hals-/lungebetændelses-ditto?

    Derudover, så glæder jeg mig til weekenden, hvor jeg vil prøve at bage pop-overs, et nyt ord i min bagebog.
