Og også temmelig meget inspireret af en dejlig kaffeslabberas i Reykjavik.

Jeg takkede nej til en hvalsafari og mødtes i stedet med søde søde Frida, som tog en medrejsende veninde og mig med rundt til byens bedste butikker og kaffebarer. Der blev udpeget gode restauranter, forsider og bagsider af det islandske liv og vi fik helt sikkert en bedre guidet tur end en proff ville ha’ kunnet givet os.

 

Frida har jeg mødt et par gange her i Danmark, hyggelige møder vil jeg sige, og det var rigtigt dejligt nu at se hende på egen hjemmebane. Snakken flyder let og frit fra hjertet, jeg mærker genklang og genkendelse, 2 kvinder fra hvert deres land men med historier indeni, som er så lettet at kode fordi de fortæller så meget af det samme.

Udenpå ser vores liv forskellige ud men den slags skal man ikke lade sig narre af…

 

Vi sluttede eftermiddagen af med kaffe og kage på en lille cafe overfor byens imponerende Hallgrímskirkja. Udsigten var spændende men det var nu mere kaffe, snakken og ikke mindste kagerne, der fik vores opmærksomhed.

Jeg fik en Skyrkaka, som ligner en oldschool ostelagkage, smagen og konsistensen er bare lettere og friskere. Jeg har tænkt på de smagfulde bidder mange gange siden og også fundet opskrifter på nettet. Men jeg havde lyst til at udnytte den sunde skyr  –  som udtales med i ikke y  –  og har derfor fiflet mig frem til en udgave uden fedtet kiksebund.

Æggeblommer er der i, javist, men jeg havde lyst til en fromagekonsistens og så er æg i virkeligheden ikke så stor en synder, som de ofte gøres til.

Kagen blev lavet i går og jeg vil sige det lige ud:

Ikke en krumme er tilbage til at forsøde min formiddag med.

 

Opskriften her er kun prøvet den ene gang. Og er fin som den er. Ganske fin!

Men det betyder ikke, at jeg ikke kan finde på at eksperimentere videre.

 

SKYRKAGE næsten uden synd

Til bund:

2.5 dl nødder. Jeg brugte pecan og mandler

1 dl kokosmel

10 semidried abrikoser

4 spsk smeltet Creamed Coconut

 

Det hele køres i foodprocessoren indtil det er en jævn og findelt masse.

Denne presses ud i bunden af en papirsforet form, gerne med løse sider.

 

En bakke friske og selvfølgelig skyllede blåbær fordeles over og bunden sættes på køl mens fyldet laves.

 

Skyrtopping:

6 past. æggeblommer

6 spsk rørsukker

Kornene af 1 fed vanillestang

1 tsk rosenvand (kan sagtens undlades, hvis det ikke er på lager)

Fintrevet skal af 1/2 citron

500 g skyr 0.2 %

7-10 blade husblas

 

Pisk æggeblommerne lyse og luftige med sukkeret, vanillen og rosenvandet.

Nogen vil måske forsøge sig med et andet sødemiddel, kokos- eller birkesukker men den slags har jeg ikke en snus forstand på og aner ikke om det virker, men det ved nogen sikkert selv.

Opblød husblassen som beskrevet på pakken og smelt den derefter over vandbad. Jeg har skrevet 7-10 blade, jeg kan godt li’ at massen ikke er helt fast, men vil man gerne kunne skære knivskarpe stykker, så i med hele balladen, måske endda et par blade ekstra.

Pisk skyr og citronskal ned i æggemassen. Jeg valgte at piske for ikke at stå med små skyr-klumper men man vil også kunne folde skyren i og derved beholde mere af æggenes luftighed. Piskningen fungerede dog fint uden at smadre det “puffede”.

 

Når æggemasse og afkølet flydende husblas har ca samme temperatur, røres husblassen i skyrmassen i en lang tynd stråle. Ikke for meget af gangen, så er det nemlig at det bliver trævlet og ulæks.

Massen spredes ud over den sprøde bund og kagen sættes til afkøling nogle timer.

 

Da jeg serverede den smurte jeg toppen med honningsødede blendede blåbær. Det var ikke nødvendigt men smukt og velsmagende. Friske bær ville også være flot, hakkede nødder ligeså.

Man kunne også eksperimentere med lakridspulver, orangeblomstvand, frysetørrede bær, havtorn, revet rødt æble eller lemoncurd smurt ud under skyren. Man kunne så meget.

 

Næste gang vil jeg måske forsøge at blande et par deciliter letpisket fløde i skyrmassen. Forestiller mig at det ville være godt til en gang festlig skyrkage. Hvis du vil forsøge med det, så husk lige at justere mængden af husblas.

Næste gang vil jeg måske også lave portionsforme.

Og næste gang vil jeg sørge for at have de frysetørrede hindbær i huset, de er så smukke.

    selv tak for en rigtig, rigtig dejlig eftermiddag. når jeg laver skyrkage gör jeg netop det som du nævner, pisker skyr og flöde sammen i maskinen til det får den passende konsistens, så behöves der ingen husblas, og fyldet kan nemlig være næsten hvad som helst man har for hånden, og kan passende röres sammen med skyr/flöde blandingen. god ferie til dig og dine, og jeg er altså slet ikke misundelig!

    Jeg vil helt sikke prøve. Lige nu funderer jeg over hvad jeg kan erstatte creamed coconut med, for det har jeg ikke. Men jeg har altid skyr, så mon ikke jeg finder ud af noget. Tak fordi du gider at dele med os andre 🙂

    Den kaken så aldeles deilig ut, den må jeg prøve å bake. Men klarer ikke å finne ut hva skyr kalles i Norge?
